Aratikaaya Vepudu(Plantain Stir Fry),Aratikaaya Perugu Pachadi(Plantain Yogurt Chutney),Aratikaaya Thokkala Pachadi(Plantain Peel Chutney)

Today we are going green--- don't be confused.By going green I mean that I am going to present you with recipes made from Green Plantain/Raw Banana.Recipes...........? Yes, recipes---Not 1, Not 2 but 3 recipes with just 2 Plantains/Raw-Bananas.I love Plantain trees---this is a very useful plant for the human-being in it's entirety.


First,I am going to make simple fry(with very less oil) with 1 Plantain.............

                             Aratikaaya Vepudu/Plantain Stir Fry( Simple and Easy)


Main Ingredients :
-------------------
Plantain/Raw Banana................1(large)
Onion.......................................1(small)

Seasoning Ingredients :
------------------------
Olive Oil.................................3tsp
Cumin Seeds...........................1tsp
Turmeric.................................1/2tsp
Paprika...................................1tsp
Salt..........................................to taste
Curry Leaves............................few

Preparation :
--------------
Rinse the Plantain very well and peel the skin.Keep the peeled skin aside and cut the plantain into small pieces.Also chop the onion into small pieces and keep it aside.


Now place a pan on the stove on medium-high heat and add the olive oil .Before the olive oil heats up add cumin seeds and plantain pieces and give a nice stir and let cook for 4minutes.


Now add turmeric,onions to the plantain pieces and stir well and cook it covered with a lid.


After few minutes add salt and paprika to the plantain pieces and let cook covered for 2 more minutes and switch off the stove.

 Finally add the chopped curry leaves.


Simple and easy Plantain Fry is ready to serve with hot rice.

Second, I am going to make a simple and easy yogurt chutney with 1 Plantain..........

                               Aratikaaya Perugu Pachadi/Plantain Yogurt Chutney


Main Ingredients :
-------------------
Plantain/Raw Banana....................1(large)
Yogurt..........................................2cups

Seasoning  Ingredients :
-------------------------
Olive Oil...............................2tsp
Chana Daal...........................1tsp
Urad Daal.............................1tsp
Mustard Seeds......................1tsp
Cumin Seeds.........................1tsp
Asafoetida.............................pinch
Red Chilly..............................1
Turmeric................................1/2tsp
Salt........................................to taste
Curry Leaves..........................few

Garnish :
----------
Cilantro...............................few leaves

Preparation :
--------------
Rinse the Plantain very well and peel the skin.Keep the peel aside.Pressure cook the plantain for 2 whistles.

While the pressure is settling down let's get the yogurt ready.Take the yogurt in a bowl and whisk it well and add little turmeric and salt.(Thick buttermilk is fine too.Do not use diluted buttermilk).


Now once the pressure is off take the cooked plantain out of the cooker.Let's get the seasoning ready.


Take a pan and place it on the stove on medium heat,add oil, mustard seeds,chana daal,cumin,urad daal,red chilly and asafoetida.


Once the seasoning is ready,add boiled plantain to the seasoning and mash it well.Add turmeric,salt and curry leaves let cook for a minute and switch off the stove.


Now add this seasoned mashed plantain to the yogurt.Adjust salt accordingly and garnish with cilantro.


Simple and easy Plantain Yogurt Chutney is ready to serve with hot rice or roti.

Third, I am going to make a very tasty chutney with Aratikaaya Thokkalu/Plantain Skin.Yes, you heard it right!

                              Aratikaaya Thokkala Pachadi/Plantain Skin(Peel) Chutney


Main Ingredients :
-------------------
Aratikaaya Thokkalu/Plantain Peel..............from 2 large Plantains

Seasoning Ingredients :
------------------------
Olive Oil....................................3tsp
Sesame Seeds............................2tsp
Chana Daal................................2tsp
Urad Daal..................................2tsp
Mustard Seeds...........................1tsp
Cumin Seeds..............................1tsp
Red Chilly..................................1
Turmeric....................................1/2tsp
Tamarind Paste.........................2tsp
Fenugreek.................................few seeds
Asafoetida.................................pinch
Jaggery/Bellam..........................very small piece
Salt............................................to taste

Preparation :
--------------
Take the peel of 2 well rinsed plantains and chop it into small pieces.Make sure that the peel is tender(not too fibrous).


Place a pan on the stove on medium heat.Add oil,chana daal,mustard seeds,cumin seeds,urad daal,red chilly,sesame seeds,fenugreek seeds and finally asafoetida in the order mentioned.



Once the seasoning is ready add the chopped plantain peel and turmeric to the seasoning and stir well and let cook for few minutes.Later add salt and stir in between .




Once the raw smell of the plantain peel is gone and the peel looks cooked switch off the stove.Transfer all the hot ingredients to a mixie jar.


Add tamarind paste and jaggery to the contents of the mixie jar and blend.


Yummy,Plantain Skin Chutney is ready to serve with hot rice.

Note :
--------
1)Two Plantains ---Three tasty and simple recipes.

2) All these above 3 recipes can be made in 30 minutes excluding the pressure cooking time.

3)Try not to add any water while making the Plantain Peel, if it is too hard to blend add little warm water.

4)In the Plantain Peel Chutney you can use sugar instead of jaggery.You may also adjust tamarind and chilly according to your taste.
